Verstehen Nährstoffmangel im Überblick

Ein Nährstoffmangel entsteht, wenn der Körper über längere Zeit weniger von einem Vitamin oder Mineralstoff bekommt, als er verbraucht. Das passiert selten über Nacht: Die Speicher leeren sich über Wochen oder Monate, und die ersten Zeichen sind unspezifisch. Müdigkeit, Konzentrationsprobleme, brüchige Nägel, häufige Infekte oder Muskelkrämpfe können viele Ursachen haben. Genau deshalb wird ein Mangel oft lange übersehen.

Welche Nährstoffmängel am häufigsten sind

Laut Weltgesundheitsorganisation ist Eisenmangel der weltweit häufigste Nährstoffmangel, betroffen sind vor allem Frauen im gebärfähigen Alter. In Deutschland und Österreich kommen Vitamin D im Winter, Folsäure vor und in der Schwangerschaft, Vitamin B12 bei veganer Ernährung und im Alter sowie Jod dazu. Die Deutsche Gesellschaft für Ernährung (DGE) veröffentlicht für jeden Nährstoff Referenzwerte nach Alter und Geschlecht; auf diese Werte beziehen sich alle Artikel dieser Themenseite.

Woran du einen Mangel erkennst

Typisch ist nicht ein einzelnes Symptom, sondern die Kombination: Wer erschöpft ist, blass wirkt und dazu Haare verliert, sollte an Eisen denken; wer Kribbeln in Händen und Füßen mit Vergesslichkeit verbindet, an Vitamin B12; wer nächtliche Wadenkrämpfe hat, an Magnesium oder Kalium. Jeder Artikel beschreibt die Symptome des jeweiligen Nährstoffs, die Risikogruppen und die Lebensmittel, in denen er steckt, pflanzlich und tierisch, mit Werten pro 100 Gramm.

Wie ein Mangel festgestellt wird

Symptome allein reichen nicht. Ob wirklich etwas fehlt, zeigt ein Blutbild beim Hausarzt: zum Beispiel Ferritin für die Eisenspeicher, 25-OH-Vitamin-D für Vitamin D oder Holo-Transcobalamin für B12. Erst messen, dann handeln: Nahrungsergänzung ohne Befund kann bei manchen Nährstoffen mehr schaden als nützen.
